Local produce & livestock from on and off campus sources is incoporated into the residence hall dining experience. Vegetarian options are always available at all locations.
SIU LOGIC - Local Organic Garden Initiative of Carbondale

Students in Spring 09' Geography 433, Eco Dawgs, Campus Sustainability Project, Plant and Service Operations and University Housing worked together to create an organic garden on campus to supply local, organic, seasonal produce for Lentz Dining Hall. The garden is located at the Vermicoposting facility on Pleasant Hill Rd. in four raised beds. The garden allows students, employees and community members a chance to be involved in the ongoing development, maintenance and operation of local vegetable and herb production.

Student Center Dining
Student Center dining and campus wide catering services are provided by Chartwells. As an emerging leader in sustainability, Student Center dining by Chartwells is committed to several sustainability efforts including local produce, cage free eggs, non-threatend fish species as identified by the Monterey Bay Aquarium's Seafood Watch initiative, rBGH and rBST free milk, fair trade and organic coffee, and waste reduction practices. They are also working to incorporate biodegradable dining ware.
